Bloom
Bloom gelatin in 3 tbsp cold milk.

Whisk
Whisk yolks, honey and salt until pale.

Temper
Warm remaining milk to steaming; pour slowly into the yolks, whisking.

Set
Return to low heat, stir to 80°C, add gelatin and vanilla. Pour into ramekins; chill 3 hours.
Doctrine
Glycine from gelatin plus the glucose from honey drops core temperature and steadies blood sugar through the night.

Egg yolks are the richest everyday source of choline and carry the fat-soluble vitamins the whites do not. Six of them in a custard is a deliberate dose, not a dessert with eggs in it.
