Par-boil
Boil potatoes in salted water 10 minutes. Drain; shake the pan to rough the edges.

Heat fat
Heat tallow in a roasting tin at 220°C until smoking.

Roast
Add potatoes, turn to coat. Roast 35 minutes, turning once.

Salt
Salt generously while hot.

Potatoes, cooked in the right fat
A potato is safe starch — glucose with potassium attached and none of the anti-nutrients of grain. What goes wrong is the fat it is cooked in, which for most restaurant potatoes is seed oil.
Tallow is stable at roasting temperature, carries the fat-soluble vitamins in, and produces the crust seed oils cannot. Salt them well; the sodium is part of the point.
