Why it works

Retinol is the preformed version of vitamin A, so the body does not have to convert it from carotene first. Copper and B12 are both present in amounts that most single foods cannot match.

Nutrient density is a ratio rather than a total, which is the whole argument for liver. A once-weekly portion supplies more of these three nutrients than a week of most alternatives.

How to buy and prepare it

Calf liver is milder than mature beef liver and is the better place to start. Look for a deep burgundy color and a glossy, unbroken surface.

Ask the butcher to slice it about a centimeter thick. Thinner slices overcook before a crust forms, which is the single most common reason people decide they dislike liver.

Soak the slices in milk for twenty minutes, then pat them completely dry. Sear ninety seconds per side in a hot pan with butter, and take them out while the center is still pink.

Caramelized onions are the traditional pairing because their sugars balance the mineral edge. Overcooked liver turns grainy and will not recover, so err early.

Use fresh liver within two days of purchase, or freeze it on the day you buy it. Portion before freezing so you can thaw a single serving rather than the whole piece.

How often should I eat liver?
A single 3 oz portion once a week is the usual recommendation. Liver is unusually concentrated in preformed vitamin A, so more is not better, and anyone who is pregnant or taking a vitamin A supplement should raise it with a clinician first.
Does soaking in milk actually do anything?
It softens the mineral flavor that puts most people off. It is a preference step rather than a safety one, and you can skip it if you already like the taste.
Is calf liver better than beef liver?
Milder, not more nutritious. The two are close on composition; calf liver is simply easier to like on a first attempt.
