Carrot

Carrot is the root vegetable the 50 Man Foods recommends raw, not cooked. The fiber in raw carrot binds endotoxin and excess estrogen in the gut and carries them out before they are reabsorbed.

Most men cook their carrots, which destroys some of the fiber and makes the sugar hit faster. Raw is the point.

Why it works

The fiber in raw carrot acts as a binder in the gut. It binds endotoxin (lipopolysaccharide from bacteria) and excess estrogen, which would otherwise be reabsorbed and drive inflammation.

Beta-carotene from carrots is the precursor to vitamin A, which supports testosterone synthesis.

How to buy and prepare it

Firm, bright orange carrots without soft spots or cracking. Bunched carrots with green tops are fresher.

Avoid rubbery or shrivelled carrots; they are old.

Scrape or peel, grate or cut into sticks. Eat raw with a little fat — butter, olive oil or dip — to absorb the beta-carotene.

Cooked carrots are still nutritious but the binding fiber is partly destroyed. Raw is the reference.

Store in the fridge crisper for up to two weeks. Remove the green tops; they draw moisture from the root.

Peeled carrots keep in water in the fridge for a week.
