Why it works

Retinol in liver is the active form of vitamin A. It supports testosterone synthesis in the testes and does not need converting the way beta-carotene does.

Folate from liver is the methylated form, which supports the methylation cycle that testosterone production depends on.

How to buy and prepare it

Fresh, firm chicken livers from pastured birds. The color should be deep red-brown, not pale or green.

Avoid livers that smell off, look slimy or have white spots.

Rinse, pat dry, pan-fry hot in butter with salt and onions for 3–4 minutes. The center should stay pink.

Overcooked liver is the reason men dislike it. Three minutes is the maximum; the residual heat finishes it.

Raw chicken liver keeps 2 days in the fridge. Freeze for longer; thaw in the fridge overnight.

Cooked liver keeps 3 days cold.

Can I eat chicken liver every day?
Not every day — the vitamin A is high enough that daily intake could build up. Once or twice a week is plenty.
Is chicken liver inflammatory?
No. It is one of the most anti-inflammatory foods in the 50 Man Foods, with the retinol and folate to show for it.
What if I hate the taste?
Soak in milk for an hour, then pan-fry with butter and onions. The milk removes any metallic edge; the butter and onions do the rest.
