Lobster

Lobster is the shellfish that replaces oysters when you want the minerals without the brine. It carries copper, selenium and zinc in the ratios the endocrine system expects.

Why it works

Copper and zinc in lobster arrive together, so eating one does not push the other down. This is the problem with zinc supplements and why whole food is better.

Selenium from lobster supports the thyroid and the conversion of T4 to T3.

How much, how often

  • 100–200 g

    Once or twice a week

Copper and selenium without the brine of oysters.

  • Boiled or grilled

    With butter

Grill the tail for a better flavor than boiling.

How to buy and prepare it

Whole live lobsters should feel heavy and move their claws. Frozen tails are a practical fallback.

Avoid lobster that smells of ammonia or has discolored meat.

Boil or steam whole for 10 minutes per kg. Split lengthwise, remove the tomalley, eat the meat with butter.

Grill halved lobster tails with butter and salt for a better flavor than boiling.

Live lobsters cook the day you buy them; do not keep them alive overnight in tap water.

Cooked lobster keeps 2 days in the fridge; frozen tails keep for months.

Both are excellent. Oysters have more zinc; lobster has more copper and selenium. Rotate between them.
Is lobster high in cholesterol?
Yes, and that is not a problem. Dietary cholesterol from shellfish does not raise blood cholesterol in the majority of men.
Can you eat lobster if you are allergic to shrimp?
Usually, yes. Shellfish allergies are species-specific; many people allergic to shrimp tolerate lobster. Test cautiously.
