Parsnip

How to buy and prepare it

Small to medium parsnips are sweeter and less woody. Large ones can be fibrous and pithy in the center.

Firm, pale tan skin without soft spots or wrinkling. Avoid any that are shriveled or sprouting.

Peel and roast at 220°C with salt and fat — butter, tallow or olive oil — until the edges caramelize.

Mashed with butter and cream they replace potato as a side, with more fiber and a nuttier sweetness.

Store dry in the fridge crisper for up to two weeks. Do not wash before storing; moisture speeds spoilage.

They freeze well after blanching — peel, cut, blanch three minutes, cool and freeze flat on a tray.
