Roast
Roast bones at 220°C for 30 minutes.

Cover
Transfer to a stockpot with vinegar, onion and cold water to cover. Rest 30 minutes.

Simmer
Bring to a bare simmer. Hold 24 hours, skimming once.

Strain
Strain, salt, chill. Skim fat if you like. Keeps 5 days.
Doctrine
Muscle meat is high in methionine; broth supplies the glycine that balances it. Drink a mug with any steak.

Long-simmered bones give up gelatin, glycine and the minerals in the marrow — the things a modern diet is shortest of and the things most people pay for as collagen powder. Twenty-four hours is what it takes; twelve gives you stock, not broth.
