Spoon the rice into bowls, flatten it with the back of a spoon.
-
Step 3
Lay the roe over the rice in a single layer. Do not break the eggs.

Why this recipe
Why salmon roe
Roe is the part of the fish that has to build a whole animal from nothing, so it is packed with what that job takes. Per 100 g, USDA lists cured red and black caviar, its closest entry to a tin of pressed salmon roe, at 20 mcg of vitamin B12 (more than eight times the daily value), 65.5 mcg of selenium (119% DV) and 491 mg of choline (89% DV), with 271 mcg of vitamin A (30% DV), 2.9 mcg of vitamin D (15% DV) and 24.6 g of protein.
B12 supports normal energy metabolism and red blood cell formation, selenium supports normal thyroid function, and choline supports normal liver function. Half a tin each is a small portion, which is why the rice and butter are there: they turn a garnish into lunch.
