Mango

Mango is the fruit the 50 Man Foods reach for first because it is sweet enough to replace dessert, carries a full day's vitamin C in one fruit, and its sugar comes with fibre, potassium and carotene rather than alone.

Ripe fruit is the carbohydrate this way of eating prefers over grains: the sugars are simple, the load on the gut is light, and the vitamins come with it.

Why it works

Fruit sugar arrives with water, potassium and vitamin C and without the antinutrients, lectins and polyunsaturated fat that whole grains and seeds carry. For a man trying to eat more calories without inflaming his gut, ripe fruit is the easiest place to get them.

Vitamin C is used up faster under stress and is needed to make carnitine and collagen; mango and orange are the two fruits that supply it in quantity year-round.

How to buy and prepare it

Judge by feel and smell, not colour: a ripe mango gives slightly under the thumb and smells of mango at the stem. Ataulfo (honey) mangoes are small, yellow, fibreless and the sweetest; Kent and Keitt are large and mild; Tommy Atkins is the fibrous supermarket default.

Frozen mango chunks are picked ripe and are excellent for the smoothie.

Stand the mango on its end and cut down either side of the flat stone. Score the flesh in a grid, push the skin inside out and slice the cubes off. Eat it as it is, or blend a cup with kefir, a yolk and honey.

Ripen at room temperature, then refrigerate up to five days. Cut mango keeps two days cold; frozen cubes keep for months.

Is mango too high in sugar?
A whole mango carries about 45 g of sugar with fibre and water. For an active man eating whole food it is a good source of carbohydrate; for someone sedentary with insulin resistance, half a mango is a sensible portion.
Fresh or frozen?
Both. Frozen mango is picked ripe and flash-frozen; vitamin C holds up well. It is the practical choice for smoothies.
Does mango have vitamin A?
As beta-carotene, which the body converts inefficiently. Count it as a bonus, not a source; retinol from liver, eggs and butter is the real vitamin A.
