No common food carries more zinc per bite than an oyster. Six medium Pacific oysters deliver more than the daily value for zinc, copper and vitamin B12 at once, in about 80 calories, and they do it with the minerals already bound to protein the body recognises.

That is why oysters lead the shellfish family in the 50 Man Foods. Zinc is the mineral testosterone synthesis leans on hardest, and it is the one most men run short of when their diet is built on grains and chicken breast.

Why it works

Zinc sits inside the enzymes that convert cholesterol to testosterone and inside the receptor that reads it. Deficiency lowers testosterone measurably and repletion restores it in men who were short; that is the whole case, and oysters are the densest food source there is.

Copper matters because zinc and copper compete for absorption. A zinc supplement taken alone can push copper down over months; oysters bring both in a ratio that does not.

How to buy and prepare it

Buy them alive. The shell should be tightly closed, or close when tapped, and the oyster should feel heavy for its size with liquor inside. A gaping shell that does not react is dead and goes in the bin.

Smaller, deeper-cupped oysters are sweeter; large flat ones are brinier. Tinned smoked oysters are an acceptable fallback for zinc, though the smoke brings oil you will want to drain.

Raw on the half shell is the reference. Scrub the shells, hold the oyster flat-side up in a folded towel, work an oyster knife into the hinge and twist. Slide the blade under the top shell to cut the muscle, then under the oyster to free it.

If you would rather cook them, a pan roast — oysters warmed for ninety seconds in butter, cream and their own liquor — keeps the minerals and loses nothing but the fear.

Live oysters keep for up to a week in the fridge, cup side down, covered with a damp cloth. Never seal them in water or in an airtight container; they need to breathe. Shucked oysters in their liquor keep two days.

How many oysters a week?
Six to twelve, once or twice a week, covers zinc comfortably. Daily oysters are not harmful, but zinc above 40 mg a day for months can push copper down, so there is no reason to eat them at every meal.
Are raw oysters safe?
From a reputable source, chilled properly and eaten alive, the risk is low for healthy adults. People who are pregnant, immunocompromised or have liver disease should eat them cooked; Vibrio infections are rare but serious in those groups.
Do cooked oysters lose the zinc?
No. Zinc is a mineral and heat does not destroy it. You lose a little to the cooking liquid, which is why a pan roast that keeps the liquor is a good way to cook them.
